My new food obsession! This past winter in SF I was introduced to a new kind of frozen yogurt. It's like Plain frozen yogurt (the places generally refer to it as "original") a little bitter but sweet at the same time. You have to try it! It's amazing. We need one of these places in Vancouver!

Spaghetti Squash

This is kind of an embarrassing thing to admit but I've never had a spaghetti squash till tonight. Never even seen one cooked! Now being enlightened, these things are AMAZING!

My husband and I are trying desperately to eat healthier and feed our children better. We've been doing well at it for about 4-5 weeks now. At 5:30pm I was on my way to the bank and grocery store with absolutely no idea what I was going to make for dinner. So, I called my faithful friend Kim and asked what she was making for dinner. She's always doing something creative and yummy. Once again she came through for me! Thank you Kimmy! My family loved it. Jess, who usually has a hard time finishing the first serving, had THREE servings!

All you do is cut and clean out the squash. Bake it cut side down on a cookie sheet at 350 for about 45'. For the marinara I used ground chicken breast, italian seasoning, red pepper flakes and a generic sauce from the grocery store. Super simple, the way I like it and need it.

Stuffed Squash with Quinoa

After being in China and realizing how much processed, boxed, canned garbage we eat I've been inspired to change my ways. I came home with a new commitment to feeding my family and myself healthier.

I have decided to schedule my day differently. Starting with getting up every morning at 5am, giving me about 10 working hours. This is HUGE, being that I'm totally a night person. I layed out my day so that I should be able to stop working (guilt free) by 4pm. Giving myself time to actually prepare dinner. On a normal day dinner around here consists of panick, what do we have that's fast and easy, usually bearing unhealthy results.

My first recipe went off successfully. My kids even ate it after they got over the initial shock of the healthy look of it. My youngest replied when she sat down to dinner, "we're going to actually eat those". I found this recipe on Pink Lemonade Boutique's blog. She also makes super cute clutches and other goodies. I did end up changing it because I didn't have most of what she recommended and I was too short on time to run to the store. For my veggies I used brocolli, garlic, some herbs and tomatoes. I also added some chicken, roasted pine nuts and a few cubes of brie cheese to make it a meal by itself. (I added the brie at the end so that it just softened a bit without getting runny)
